Pulled Pork:

  • Pork Brine: Apple juice, water, yellow sugar, kosher salt, lemon juice, dry thyme, dry rosemary, peppercorn, orange juice concentrate

  • Bone-in pork shoulder, apple juice, apple cider vinegar

Chicken:

  • Chicken Brine: Water, kosher salt, sugar, lemon juice, thyme, parsley, garlic, peppercorn, bay leaf
  • Chicken Rub: Oregano, paprika, garlic powder, granulated onion, cumin

Pork side ribs: Pork ribs, kosher salt, granulated onion, garlic powder, paprika, black pepper

Pastrami: Beef brisket, kosher salt, yellow sugar, curing salts, coriander, black pepper, Dijon mustard

Chorizo Sausage: 75% lean ground pork, toasted rice crumbs, salt, mustard, dextrose, cumin, smoked paprika, red wine

Extreme Poutine:

Kennebec Potato Fries: potatoes fried in zero trans-fat corn and canola oil, kosher salt, black pepper

Fried Cheese Curds: Cheese, AP flour, liquid egg, spent grain brioche breadcrumbs, oregano, paprika, garlic powder, granulated onion, black pepper.

  • Spent grain brioche: Bulk white flour, water, sugar, whole eggs, shortening, butter (salted), spent grains, yeast, whey powder, salt, O-Tentic durum flour.
