Thursday Beef Ribs Special

These locally sourced AAA Alberta beef ribs from Beretta Farms’ are smoked for 3+ hours in Clifford, our big red BBQ pit. Beef ribs are extremely tender and juicy for two reasons. First, we cook them up until 205 which allows the intramuscular fat to render into the meat. Secondly, the muscle tissue around and between the rib bones are scarcely used during the life of the cattle.
