These locally sourced AAA Alberta beef ribs from Beretta Farms’ are smoked for 3+ hours in Clifford, our big red BBQ pit. Beef ribs are extremely tender and juicy for two reasons. First, we cook them up until 205℉ which allows the intramuscular fat to render into the meat. Secondly, the muscle tissue around and between the rib bones are scarcely used during the life of the cattle.
