Baja Smoked Beef Tacos
These drool-worthy corn-tortilla tacos are stuffed with beef that has been smoked for several hours and then braised in a rich beef broth, then topped with crunchy purple cabbage, pico de gallo, diced avocado and doused with our creamy and spicy baja sauce.
This is our Albertan take on a popular dish from the Baja peninsula that is commonly made with locally caught whitefish. Instead, make this dish with beef that we smoke for several hours and then braise in a rich broth (Prairie Dog Brewing is seafood free). We then place the beef on three grilled corn tortillas and top with purple cabbage, pico de gallo, diced avocado and our Baja sauce. Smokey, tender and beefy!
Braised beef: beef, beef stock (veal bones, onion, carrot, celery, tomato paste, canola oil kosher salt, black pepper, fresh thyme, fresh rosemary, bay leaves, black peppercorn, garlic)
Pico de gallo: Roma tomatoes, red onion, jalapeno, green onion, cilantro, kosher salt, black pepper, apple cider vinegar, lime juice.
Baja Sauce: mayonnaise, sour cream, chipotle peppers in adobo sauce, lime juice, fresh cilantro, garlic powder, granulated onion powder, coarse black pepper.
Corn tortilla: water, ground yellow corn, ground white corn.
Red cabbage, kosher salt, sugar, diced avocado.
All allergens are present in the Baja sauce. To remove allergens, remove the sauce.
