Sunset Series Episode 1

Our Sunset series starts with a dark saison base recipe that is aged in American oak red wine barrels where wine yeast, wild yeasts and/or bacteria encourage a secondary fermentation which can create flavours from fairly “clean” to “sour” or “funky”. Each barrel develops its own character that continues to evolve over time, leading to very unique episodic releases in the form of a single barrel release or a blend across several barrels. Beers from this series are intended to drink now, but are capable of cellaring and will most definitely evolve in the bottle over time. 

Sunset Episode 1 is an escape from the cool grasp of winter (and 2020) that sends you on an island getaway filled with tropical fruit. After 4 months of aging, we found our most fruity and bright Sunset barrel and dosed it with a combination of pink guava and passionfruit before aging and fermenting for an additional month. Expect a pleasant combination of tart and fruity tropical notes with some back end funky, vanilla, and oak flavours.

Sunrise and Sunset Episode 1 were both intended to highlight the wide array of flavours that the customer can expect with future episodic releases, each having its own unique identity.
