Our 2020 edition is a Belgian-style strong, dark beer aged in oak red wine barrels and co-fermented with wild microorganisms to produce a blend of sweet vanilla and dark fruit flavours along with a mild acidity like red wine and a complex blend of spicy phenols.
Midnight Combine (2020) is a strong, Belgian-style dark ale aged in American oak barrels for at least 3 months and allowed to undergo a secondary ferment through an inoculation with Brettanomyces yeast. The result is a blend of sweet vanilla and dark fruit notes paired with a mild wine-like acidity and complex blend of spicy phenols. This beer has been conditioned in the bottle and will continue to evolve as the beer ages. Our 2020 release is ready to drink now, but intended for cellaring for up to 3 years.
The 2020 release of Midnight Combine is intended to be highlighted as a contrast to the 2019 Midnight Combine and show the benefit of one full year of aging. Both vintages can be enjoyed now but will also do well with continued aging (cool, dark conditions are best) of up to 3 years (an additional 2 years for the 2019 vintage). Purchase both the 2020 and 2019 bottles and taste the unique differences between them.
