Alby the Elder DIPA

Alby the Elder is an aggressively-hopped west-coast-style double IPA with some throwbacks toward our favourite doubles of Northern California. Clocking in at just over 100 IBU (lab-tested), this beer has a high level of bitterness, but we made up a lot of those IBUs with whirlpool hops, and gave it a massive double dry hop, so the beer has tons of hop aroma and flavour (we could smell it from across our large building when a brewer was sloshing it for gravity samples). Not just hop, there’s still a tasty malt base to balance things out. The elevated alcohol, high bitterness and fairly dry body serve to make Alby the Elder beer best suited to the hop heads among us.
Alby the Elder Double IPA is a tribute to one of our heroes, Vinnie Cilurzo, of Russian River Brewing in Sonoma, California, who is often credited for creating both the double and triple IPA styles, with Pliny the Elder and Pliny the Younger, as well as for popularizing the brewing of Belgian-inspired lambic-style sours in North America using local wine barrels and wild yeasts.
|Appearance:||Copper to amber in colour. Fairly clear with a slight haze. Ivory/cream foam that persists with some legs clinging to the glass due to its higher ABV|
|Aroma:||Hop resin, pine and citrus with a hint of stone fruit and herbal spiciness|
|Flavour:||Tropical and citrus notes dominate the initial palate, while flavours of pine, herbal spice and a slight drying bitterness take over the finish|
|Mouthfeel:||Soft and creamy initially with a noticeable bitter and slightly drying finish|
|Hops:||A hefty double dry hop with Lemondrop, Simcoe, and Chinook at a total rate of 16g/L (4lb/bbl) !!!|
|Malts:||Red Shed Biscuit and Origin Munich malt|
|Other:||Flaked Rye adds a silky and spicy balance to compliment the strong hop character|
